Where is your bakery located?

Tinker & Toast is a cottage bakery located in the Heritage District of Sunnyvale, California. It is a fully licensed, Santa Clara County-permitted Cottage Food Operation. All ingredient lists are approved by the county.

Where do you source your ingredients?

I use high quality, organic ingredients whenever possible. The bulk of my flour comes from Central Milling in Petaluma, Calif. Central Milling works closely with local farmers and has traceability from field to flour. I try to purchase locally but I also source ingredients from:

What’s the benefit of freshly milled flour?

I have a small stone mill on site so that I can add in grain that has been milled the same day the dough is mixed. This gives me control over the fineness of the grind and amount of bran in the flour. The flavor of freshly milled, heritage grains is far better than what you might find at a grocery store.

I’m sensitive to wheat. Can I eat your bread?

I hope so! Our products are tolerated by people with sensitivity, but everyone reacts to wheat differently. I feel your pain, because I developed a fairly severe wheat sensitivity a few years ago and received a formal diagnosis late in 2019. Long-fermented sourdough products and heritage/non commodity wheat products are generally easier to digest.
